25 STAR BALSAMIC VINEGAR OF MODENA Dark as night with a heavenly thick consistency and a sweet, pungent taste that delights all the senses. The true artisan quality product from centuries old recipes. Aged in small barrels under the traditional methods with strict controls it reaches a perfect balance of aroma and flavour when fully mature.
4 STAR 4 Star Balsamic Vinegar represents some of the youngest balsamic made. It is typically a dark brunette color with an intense aroma of the grapes. Its pungent quality adds a balance of sweet and sour flavour to salads and grilled vegetables. It is commonly reduced over heat to create a wonderful reduction for special sauces.
6 STAR WHITE Different from typical balsamic vinegar in that it has a lower acidity level and a pale color. It has a delicate balsamic flavour that compliments many fine recipes without darkening the ingredients of the dish.
8 STAR A superior balsamic vinegar, with a rich brown color and a slightly woody bouquet. It is quite dense and clings to the food on which it is drizzled. We recommend it with raw fruits and vegetables to bring out the fresh flavour of earth’s bounty. Serve it with parmigiano reggiano or taleggio cheese.
BLACK WALNUT A mild walnut flavour that is great on salads, pasta or rice. Use it alone or with any olive oil. A great marinade for meats. Try it!
BLUEBERRY Like all Balsamic vinegars, you can use this over any garden salad. While it will pair up with any unflavoured oil, using lighter Extra Virgin oils, like Arbequina, will allow you to experience the maximum blueberry flavour.
